Weekend recipe: summer gazpacho
Ingredients:
1/2 cup of cherry tomatoes
1/4 cup of fresh goji berries or dry, but pre-soaked
1 celery stalk
6 leaves of basil
1/2 cup of almond milk
1 tablespoon of olive oil
1 teaspoon of lime juice
A pinch of salt
Recipe:
Put the cherry tomatoes, goji berries, celery and basil leaves in a blender, pour almond milk and pulse until you get a smoothly consistency. Add lime juice, season with salt and pulse for a few more seconds. At the end sprinkle the soup with olive oil.
In preparing this gazpacho it is necessary that almond milk and tomatoes are very cold.
