Weekend recipe: frittata with cucumber and avocado
Ingredients:
1 cucumber
1/2 avocado
1/2 yellow zucchini
A brunch of fresh green basil
A brunch of fresh kale or spinach
4 eggs
1/4 cup of water
1 whole-grain bread
Olive oil
Lemon juice
Salt
Pepper
Recipe:
For salad: peel the cucumber and using a vegetable peeler cut into thin slices. Peel the avocado, slice and sprinkle with lemon juice. In a bowl mix cucumber, avocado and basil leaves.
In a pan fry bread in olive oil on both sides and set aside.
Take a half of yellow zucchini and cut into small pieces. Put it into the frying pan and roast in olive oil for several minutes. Add a bunch of kale or spinach on your choice, stir to combine and continue frying for about 3-5 minutes. Don’t forget to season with salt and pepper.
Meanwhile, in a bowl whisk the eggs with water and a pinch of salt. Pour the egg mixture over the pan, cover with a lid and fry over a low heat until the eggs start to settle and cook for about 5 minutes.
Serve the frittata with the cucumber and avocado salad and bread.
