Spaghetti with sardines

Spaghetti n.5 thin (500 gr.)
Sardines of medium size (200 gr.)
Onion, small white (1 pc.)
Garlic (1 clove)
Pine nuts (20 oz.)
Saffron at the tip of a teaspoon
Raisins soft, (5/7 pcs)
Fennel seeds 2/3 PCs (better wild and fresh)
Parsley for decoration
White wine (1/2 cup)
Olive oil (2 tablespoons)
Salt and pepper up to taste
How to COOK:
Peel and finely chop onion and garlic, gently stew both in a pan with olive oil. Clean the sardines from the scales, bones and fins. It is easier to clean fish in water. Fry lightly in the same pan for 3-4 minutes, add the pine nuts, a few grains of fennel, raisins and a whisper of saffron and half a cup of dry white table wine. Mix all, bring to boil, remove from heat and cover with lid.
Cook spaghetti in a separate pan in salted water. Boil for the time less than 1 minute from the recommended on the package. Drain in a colander.
Combine the spaghetti with sardines and leave in the stove for 1 min. When serving you can decorate with chopped parsley or wild fennel.
