Weekend recipe: pancakes from humus and zucchini
Ingredients:
For hummus
2 cup chickpeas boiled
1/4 cup olive oil
1/2 cup almond milk
For pancakes
1.5 cups hummus
1/4 yam
1 zucchini
1 egg
3 tablespoons flour
2 tablespoons parmesan
3-4 tablespoons of olive oil
1 tablespoon flax seeds
1/2 teaspoon pepper cayenne
For sauce
1/2 apple peeled
1/8 cucumber
1 teaspoon agave syrup
1 teaspoon lemon juice
Sliced zest of 1/2 lemon
Sliced peel of 1/2 apple
½ teaspoon cinnamon
Recipe:
To make hummus whisk at a high speed in the blender chickpeas, after add olive oil, then lentils and finally almond milk. Blitz until smooth, then wipe the hummus through a sieve.
Grate sweet potato and zucchini on grater. In a bowl combine zucchini, sweet potato, hummus and olive oil. Pour in flax seeds and pepper cayenne. Also whisk in the egg, flour and Parmesan. Thoroughly stir the dough and put in the fridge for 30 minutes.
Heat a frying pan (it must be very hot) pour in olive oil and add a tablespoon of mixture per pancake into the pan. Cook on each side, until golden and crisp. After place pancakes in the oven until ready for 15 minutes at 70 °С temperature.
Meanwhile, prepare the sauce. Cut an apple and cucumber into small cubes, put in a deep saucepan. Add all the ingredients of the sauce and cook over a low heat. Stirring constantly, fry for about 5 minutes until caramelized.
Serve the pancakes with a dollop of apple sauce.
