Village Bean Soup

INGREDIENTS for 2 persons

500 grams of fresh beans
1 clove of garlic
A sprig of rosemary
40 gr of olive oil
Croutons
Salt and pepper to taste

HOW TO COOK:
Put the beans and the garlic clove in a saucepan. Cover with water 4 fingers above the level of the beans. Bring to a boil. Cook on low heat for 1.5 hours. Adjust the density of the soup and add salt and pepper to taste. At the end of cooking add the olive oil and a sprig of rosemary. Cover and leave for 15 min.

Serve with warm bread of any grain toast, but not custard.

Beans, one-quarter protein, which makes it indispensable in the diet. The composition of the beans include: fluorine, iron, iodine, calcium, magnesium and lots of vitamin C (more than in peaches and plums). The soup: 85 calories per 100 grams.
