Parsley Sauce

Parsley fresh — 120 gr.
Capers — 1 teaspoon
Anchovies — 3 PCs.
Eggs — 2 PCs.
Garlic — 2 cloves
Bread — 80 gr.
Vinegar grape white — 50 ml.
Olive oil fresh pressed — 150 gr.
Salt and pepper to taste

the HOW to PREPARE

Boil eggs. Stale white bread cut into slices and pour with vinegar and let stand. Well-washed parsley, garlic(no pith), capers, anchovies, boiled eggs finely chop and combine with the vinegar-soaked bread. The resulting mass put in a blender with olive oil for a few seconds. Add salt and pepper to taste.

Important! The structure of the sauce depends on the time of whipping. If you prefer a more creamy structure, increase the beating time to the desired result.

The sauce needs to stand for two hours at room temperature.

Use as a seasoning for boiled: meat, fish, eggs, vegetables. It is also delicious just to spread the sauce on the bread and get an Italian “bruschetta”.
