Pumpkin soup with grated almond cookies
INGREDIENTS for 2 people:
pumpkin 500g
large white onion 1 clove
1 stalk celery
almond milk 100ml
olive oil 1 tbsp. a spoon
cheese 50 gr
almond biscuits 1 pc.
a pinch of grated nutmeg
salt up to taste
HOW TO COOK
Slice pumpkin, onion, celery and cook for 15 minutes in a salted water under the cover. Drain off excess water and blend the vegetables with almond milk and olive oil for a minute until creamy. Serve sprinkled with almond cookie crumbs, nutmeg and grated hard cheese.
