Pizzoccheri — homemade noodles made of buckwheat flour with savoy cabbage, potatoes, green beans, basil, garlic and pine nuts
INGREDIENTS for 4 people:
The dough
buckwheat flour – 400 gr.
white flour – 100 gr.
water – 250 ml.
salt – a pinch
Filling
savoy cabbage – 250 gr.
potatoes – 350 grams.
green beans – 150 gr.
basil – 1 bunch
pine nuts – 50 gr.
garlic – 1 clove
olive oil – 150 ml.
hard cheese – 100 gr.
(Parmesan, Altai, Mountain)
black pepper
HOW TO COOK
The dough
Mix the two types of flour and knead the dough using warm water with salt. Leave in a cool place. Roll out and cut into noodles
Filling
Boil sliced savoy cabbage, potatoes and string beans in salted water for 5 minutes in a saucepan with a wide bottom. Then add the noodles and cook together for another 5 minutes keeping the lid closed. Use blender to make a sauce of basil, pine nuts, garlic and olive oil.
Mix the resulting pesto and grated cheese with noodles and serve immediately PIZZOCCHERI while hot.
