Weekend recipe: coconut rice truffles

Ingredients for 10-15 pieces:
240 ml coconut milk
240 ml cashew milk
1 cup basmati rice
1/2 stars anise
1 stick of cinnamon
2 pods of cardamom
1 teaspoon of grape juice

For topping:
1 handful fresh strawberries
Cocoa powder
Powder “Green power by Anastassia Khozissova”

Rinse the rice, place into a frying pan and fry with spices – cinnamon, cardamom and anise.
Pour coconut milk and cashew milk into a small pot, add the roasted rice, and cook for about 30-40 minutes, stirring constantly. Then, using a hand blender, blitz the rice to a creamy consistency and place it on a baking sheet in a thin layer of about 2 cm. Let the rice layer to cool, then put in the fridge for an hour.
From the ready rice layer roll little balls and decorate on your choice: you can roll the rice balls in cocoa powder, in thinly sliced strawberries or the powder “Green power by Anastasia Khozisova”.
