Weekend recipe: red rice with bok choy

Ingredients:
1 cup Thai red rice
2 cup cool water
1 teaspoon turmeric
1 leek (only white part)
2 carrots
15 – 20 green beans
3 bunches bok choy
1/2 cup white wine
pinch of salt
2 tablespoons peeled pumpkin seeds

Recipe:

Add a teaspoon of turmeric to the water and boil rice until al dente. After place the rice in a pan and fry with olive oil for a few minutes. Set aside.
Take another pan and put on a medium heat, then add olive oil, finely sliced a leek and fry for a few minutes. Then add chopped green beans and carrots and continue frying for about 5-10 minutes. Season to taste. At the end put the bok choy into the pan with veggies and pour over about a half cup of white wine. Leave to cook for a few minutes until wine almost evaporates.
Once the veg and rice are done, take a form with about 4cm diameter and create the dish in layers: first place the layer of rice and pour over the spices and pumpkin seeds, then put the layer of veggies and at the end add one more layer of red rice.
