Weekend recipe: fried egg with mushrooms

Ingredients:
½ leek (white part only)
4-5 cherry tomatoes
4 champignons
1 egg
1 teaspoon chopped pistachios
1 tablespoon olive oil
½ tablespoon apple vinegar

Slice onions, mushrooms and tomatoes. Heat the pan, add olive oil and fry the onion. Salt and fry the onion for a few more minutes. Add mushrooms, tomatoes, apple vinegar and pistachios, stir and fry until mushrooms are ready. Fry the egg separately as fried eggs. Spoon the mix of mushrooms and tomatoes on one side of the plate and egg in another.
