Weekend recipe: quinoa salad

1-2 cups cooked quinoa – it’s super easy to make: look for directions on the packaging
1 zucchini
2 small carrots
1 clove of garlic
1 red bell pepper
1 small bunch of parsley
juice of ½ lemon
olive oil
sea salt + pepper

Cut all the veggies in a small pieces. Add olive oil, salt and pepper to taste. Squeeze lemon juice. Add quinoa to veggie mixture. Ready!
